What is stevia
Stevia is a plant also called Stevia rebaudiana, but also sweet herb or honey herb. A sweetener is obtained from it, the so-called steviol glycosides. Depending on the variety, the dry matter of the stevia leaves consists of approx. 10-15% steviol glycosides, which is also known as stevioside. Furthermore, the valuable rebaudioside A in the amount of 4% -9% as well as other steviol glycosides and rebaudioside can be found in the leaves. The pure rebaudioside-A can have up to 450 times the sweetening power of sugar.
Rebaudioside-A is the sweetest part of the stevia plant and the tabs contain 18% Rebaudioside-A. Since stevia has no calorific value, these are also called "empty calories" in food. Another advantage of stevia is that it is not cariogenic and therefore does not promote tooth decay, such as sugar. Since December 2011, steviol glycosides have finally been approved as a food additive in the EU and consumers now have an alternative sugar substitute.
